Lulu Bukowiecki: If you are only talking about visual art I would define it as any visual work, whether it be a painting, sculpture, or otherwise, created to deliver a message or elicit an emotion in the viewer. Art can deliver a message or tell a story, or some art, like modern art, can be more about evoking a feeling or a response.
